Key technical solutions and performance indicators:
- High Capacity: The system is engineered to handle a simultaneous load of 35,000 kg of curd.
- Intensive Cooling: The equipment ensures a product temperature reduction from +30°C to +4°C strictly within a 24-hour window.
- Custom Central Refrigeration Unit Design: A central refrigeration unit built on Bitzer (Germany) reciprocating compressors was designed and launched, delivering a cooling capacity of 69 kW (at a suction/evaporating temperature of -8°C).
- Product Protection (Anti-Freeze Control): To preserve the texture of the curd, the minimum chamber temperature is maintained at +2°C, entirely eliminating the risk of freezing. Specialized dual-discharge ceiling evaporators were utilized to ensure a soft and uniform airflow across the entire volume of the product.
- Resistance to Aggressive Environments: Given the specific conditions of dairy manufacturing, the selected heat exchange equipment is resistant to high humidity and regular sanitization procedures.
- Energy Efficiency: A stepless compressor capacity regulation system was integrated to optimize power consumption based on the real-time thermal load in the chamber.
